Early morning struggles

Another early morning.  Guess Tyler is just going to be an early bird... not good for this late owl.  Today he woke up around 5, but I decided I would make the most of it.  I fed him while I pumped, and he fell asleep about 15 minutes after eating.  I put him back to bed, then got my butt up and did level 2 of Jillian's 30 Day Shred.

Let me tell you, it was so hard to motivate myself to get up and do it.  Part of me just wanted to go back to bed and sleep for another hour.  I really hate working out in the morning but man does it feel great to be done with it so early.

After my workout I enjoyed my overnight oats creation that I put together last night.

I'm still working on tweaking it, and this one was pretty yummy- I think the coconut milk makes a big difference.

1/3 c old fashioned oats
1 c plain coconut milk
2 T chia seeds
1/2 mashed banana
1/2 T chocolate protein powder
1/2 T cocoa powder

Just mix it together, cover it up and pop in the fridge.  You can heat it up in the morning if you want, but I like it cold.  It was like eating dessert for breakfast!

I know it looks like vomit or feces but it really does taste good.  I promise.


Lunch was a softshell taco on a whole wheat tortilla.  Turkey meat, cheese, spinach, taco sauce and plain Greek yogurt.  Hubby made up some taco meat using ground turkey yesterday, which we haven't done in awhile.



Good tip- for lower fat and less calories, substitute ground turkey instead of beef.  Just make sure you use a lean turkey- I think ours was 98% lean.  It does taste a little different, but once you mix it with other ingredients, it's less noticeable- especially tacos and chili.

Supper was a grilled chicken breast with leftover veggie stuff- veggie basket from last night and the last quinoa-stuffed pepper.



Looking forward to tomorrow- Iowa vs. Iowa State, hubby is smoking a bunch of meat in the smoker, trying a spray tan for the first time!, and several other exciting activities.

Anyone else out there ever try a spray tan?

Overnight Oats pt 2

I told you I had something brewing for breakfast.  Turned out to be fabulous this time around.

The first time I tried this I wasn't too impressed.  Then I made a couple changes.  Last night I threw together these ingredients in a glass bowl, covered it up and put in the fridge:

  • 1/3 c oats
  • 1 c vanilla almond milk
  • 1 T cocoa powder
  • 2 T chia seeds
  • 1 tsp vanilla
  • 1 ripe banana cut up and mashed in with the rest of the ingredients

Yes it looks like vomit, but it tasted like dessert.  I think the cocoa tasted way better than the protein powder I used the first time. Maybe if I found a better tasting protein powder it would be better.  I also think the chia seeds helped a lot because they soak up the extra liquid and make it more pudding-like.  The banana gives it a natural sweetness.  I will definitely be making this again, maybe even tonight!

Today was a very busy day, which was needed.  I checked many things off my to-do list, and saw a couple patients.  

I showed you breakfast, which really filled me up.  I don't think I even ate lunch until 2 or so.  All I did for lunch was throw some leftover whole wheat thin spaghetti noodles in a skillet, and heat up with some chopped garlic and parmesan cheese.  Instead the usual olive oil, I used one of my new Wildtree items.

This afternoon we went out and ran some errands around town, Tyler was ready to go with his little baseball hat.




Bought some new kicks today- much needed ones.  I'll post a pic when they come in.  Yes, I had to order them because I have huge feet- size 11.  At least stores are finally starting to carry more bigger shoes, women's feet are getting bigger and bigger.  If I ever have a girl she's probably going to have size 15 or something.

Supper was prepared by hubby- steak and potatoes, big surprise.  : ) 

At least it was just a thin sandwich-cut steak, which I only had half of.  I did unfortunately make up for that with a nice loaded potato.  Added some cheese, 1 crumpled up bacon piece and then decided that wasn't enough fat so I added some sour cream.

Getting pumped for a fun-filled grandma weekend!  Hubby is off tomorrow morning to Indiana for some boy time, and Grandma Pat is coming over to help with Tyler.  I have a feeling I will be exhausted, since my schedule is already almost completely booked for tomorrow!

Craigslist bargain hunter

This morning I made a list that had 4 things on it to get done.  I only got one done, but it was a still a somewhat productive day.  

I was up from 12 to 3:45 with Tyler but hubby took the rest of the night so I actually got a little sleep!  It felt great.  Woke up and got to eat my first attempt at making overnight oats.  This recipe is all over a couple blogs I read, and it always looked delicious.  So I tried it.  Here is the recipe I used from My Journey to a Healthy Berg, except I used a small scoop of real peanut butter.  I added dried cherries and slivered almonds on mine this morning.  You put together oats, protein powder, milk, and cocoa powder in a bowl, cover it up and eat it the next morning.  It's supposed to taste like a no-bake cookie, but I had to use hubby's gross protein powder.  It wasn't bad.




Didn't really feel too hungry for lunch, so I just had the left-over quinoa and black beans as well as one of these:



I did make it out today for a long bike ride followed by a run (that was the one thing on my list I accomplished).  It was really hard to run because it got pretty hot out, but I powered through and it felt awesome.

After showering up, I found out that a desk I had found on craigslist was available, but whoever could pick it up first got it.  So we headed down to Center Point to get a sweet desk for only $45! Pics will come later.  

We also stopped at Hy-Vee in Hiawatha to get some groceries (organic spinach! Larabars! smart chicken! and much more-sorry no pic).  We ate some Chinese while we were there, I had the beef with broccoli, steamed rice, chicken egg roll and crab rangoon.  It was ok, didn't eat all my rice or egg roll.  Hubby did not like his.  Should've gone to Quiznos.



I was going to write more today, but I'm pretty beat, so it will have to wait.  Look for a WOTW tomorrow- workout of the week!
