Mini banana muffins

Happy Thursday.  I was really hoping to get a ton of stuff done today, but that did not happen.  Tyler has been getting up once in the middle of the night the last couple nights for some reason (probably teething), and last night we decided to try to let him "cry it out".

In the past when we've done that, he just cries a little then falls back asleep.  Last night was a little different, I let him go for about 45 minutes.  Of course I didn't sleep at all and felt like a horrible mom.  I finally got up and rocked him to sleep.  Poor little guy was a wreck today, and didn't nap very well.  So there was a lot of cuddle time today.  I wish these teeth would just come out already.

I did manage to make some yummy mini muffins- recipe is below.

Can't remember if I posted this recipe yet or not.  I know I've done quite a few banana bread recipes, but this is probably one of the healthiest.  It's adapted from a recipe that one of my patients gave me.

Healthier Banana Bread Mini-Muffins
Makes approx 32 mini muffins

1 3/4 c whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
2 T flax seed meal
1/2 c lowfat buttermilk
1/2 c brown sugar
1 egg
1 T oil
1/2 c unsweetened apple sauce
3 mashed bananas

Preheat oven to 350 degrees.  Combine the first 5 ingredients in separate bowl.  Combine the buttermilk, sugar, egg, oil and applesauce and whisk well.  Add to dry ingredients and stir until just moistened.  Stir in mashed bananas.  Drop by spoonful in mini muffin pan.  Bake for 15-20 minutes, check often.  Will be done when toothpick inserted comes out clean.




Think I ate about 8 of these today.  Good thing they're so healthy, right??

Hopefully I made up for it with a good workout at my class tonight.  Lots of planks, I can feel my core getting stronger and stronger.
